Air Fryer Spinach Feta Egg Rolls

1 cup fresh spinach, chopped

1 cup feta cheese, crumbled

1/4 cup cream cheese, softened

2 green onions, finely chopped

2 cloves garlic, minced

1 tsp lemon juice

1/2 tsp black pepper

1/2 tsp salt

10 egg roll wrappers

Cooking spray or olive oil spray

Prep the Filling: In a medium bowl, combine the chopped spinach, feta cheese, cream cheese, green onions, minced garlic, lemon juice, black pepper, and salt. Mix well until all ingredients are thoroughly combined.

    Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface, with one corner facing you. Place about 2 tablespoons of the filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly. Seal the edge with a little water. Repeat with the remaining wrappers and filling.

      Preheat the Air Fryer: Preheat your air fryer to 380°F (193°C) for about 5 minutes.

        Prepare for Frying: Lightly spray the egg rolls with cooking spray or olive oil spray on all sides to ensure a crispy texture.

          Air Fry the Egg Rolls: Place the egg rolls in a single layer in the air fryer basket, making sure they’re not overcrowded. Depending on the size of your air fryer, you may need to do this in batches. Air fry for 10-12 minutes, flipping them halfway through, until they are golden brown and crispy.

            Serve: Remove the egg rolls from the air fryer and let them cool slightly. Serve hot with your favorite dipping sauce, like tzatziki or sweet chili sauce.
