Ingredients

1 lb large shrimp, peeled and deveined

1 cup shredded coconut (sweetened or unsweetened, based on preference)

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 tsp garlic powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

1/4 tsp cayenne pepper (optional, for heat)

Cooking spray (for air frying)

Dipping sauce of your choice (e.g., sweet chili sauce, mango salsa)

Instructions

Prepare the Shrimp: If your shrimp are frozen, thaw them under cool running water or in the refrigerator overnight. Pat them dry with paper towels to remove excess moisture.

    Set Up Your Breading Station:

      - In three separate shallow bowls, prepare for breading:

        - Bowl 1: Place the all-purpose flour mixed with salt, black pepper, garlic powder, paprika, and cayenne pepper (if using).

          - Bowl 2: In this bowl, beat the two eggs.

            - Bowl 3: Combine the shredded coconut and panko breadcrumbs, mixing well to ensure even distribution.

              Coat the Shrimp:

                - Dip each shrimp into the flour mixture, shaking off any excess.

                  - Next, dip it into the beaten eggs, allowing the excess to drip off.

                    - Finally, coat the shrimp in the coconut and panko mixture, pressing down gently to ensure a good coverage. Repeat this process for all shrimp.

                      Prepare the Air Fryer:

                        - Preheat your air fryer to 400°F (200°C) for about 5 minutes. Spray the air fryer basket lightly with cooking spray to prevent sticking.

                          Cooking the Shrimp:

                            - Arrange the breaded shrimp in a single layer in the air fryer basket, making sure they’re not overcrowded. You may need to do this in batches, depending on the size of your air fryer.

                              - Lightly spray the tops of the shrimp with cooking spray. This will help achieve a crispy texture.

                                - Air fry for 8-10 minutes, flipping halfway through, until the shrimp are golden brown and cooked through.

                                  Serve:

                                    - Once done, remove the shrimp from the air fryer and serve immediately with your choice of dipping sauce. Garnish with lime wedges and finely chopped fresh herbs if desired.

Enjoy your deliciously crispy Coconut Shrimp, a perfect tropical treat!
