4 boneless, skinless chicken thighs

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

1 medium zucchini, sliced into half-moons

1 bell pepper (any color), sliced into strips

1 cup cherry tomatoes, halved

1 cup broccoli florets

Fresh parsley, for garnish (optional)

Instructions
 

Prepare the Chicken Marinade:

    In a mixing bowl, combine olive oil, garlic powder, onion powder, smoked paprika, dried oregano, salt, and black pepper. Mix to create a flavorful marinade.

      Marinate the Chicken:

        Add the chicken thighs to the marinade and gently coat them evenly. Allow them to marinate for at least 15 minutes (or up to 1 hour in the refrigerator for deeper flavor).

          Prep the Vegetables:

            While the chicken is marinating, prepare the vegetables. In a large bowl, combine zucchini, bell pepper, cherry tomatoes, and broccoli florets. Drizzle with a bit of olive oil, and sprinkle with salt and pepper. Toss well to coat.

              Preheat the Air Fryer:

                Preheat your air fryer to 375°F (190°C) for about 5 minutes.

                  Air Fry the Chicken:

                    Place the marinated chicken thighs in a single layer in the air fryer basket. Air fry at 375°F (190°C) for 15-18 minutes, flipping halfway through, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

                      Add the Vegetables:

                        After removing the chicken, carefully add the seasoned vegetables to the air fryer basket. Air fry at the same temperature for about 8-10 minutes, shaking the basket halfway through, until the vegetables are tender and slightly charred.

                          Serve:

                            Once both the chicken and vegetables are cooked, plate them together. Garnish with fresh parsley if desired, and serve immediately for a perfect, colorful meal.
