½ cup unsalted butter, softened

1 cup buttermilk, at room temperature

3 large eggs

1 tablespoon baking powder

½ teaspoon baking soda

1 teaspoon salt

Zest of 2 large lemons

1 teaspoon vanilla extract

½ cup fresh lemon juice (approximately 2-3 lemons)

For the Lemon Glaze:

1 ½ cups powdered sugar

3-4 tablespoons fresh lemon juice

Lemon zest, for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, using an electric mixer, beat the softened butter and granulated sugar together on medium speed until light and fluffy, about 3-5 minutes.

        Add Eggs and Vanilla: Add the eggs one at a time to the butter-sugar mixture, mixing well after each addition. Stir in the vanilla extract and lemon zest.

          Combine Wet Ingredients: In another bowl, whisk together the buttermilk and fresh lemon juice until well combined.

            Alternate Mixing: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk mixture. Start and end with the dry ingredients, mixing just until combined. Do not overmix.
