1/2 red onion, finely chopped

1 small jalapeño, seeds removed and minced (adjust for spice preference)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

Optional: 1 small bell pepper (red or yellow), diced for extra color and sweetness

Begin by peeling and dicing the ripe mango into small cubes. Make sure to remove the pit.
