Ingredients

1 lb (450g) potato gnocchi

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes (or crushed tomatoes)

1 cup heavy cream

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves, for garnish

8 oz (about 225g) burrata cheese

Grated Parmesan cheese, for serving

Instructions

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. This usually takes about 2-3 minutes. Drain and set aside.

Make the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

Add Tomatoes and Cream: Stir in the diced tomatoes (with their juice) and heavy cream. Add Italian seasoning, salt, and pepper. Bring the mixture to a gentle simmer and cook for about 5-7 minutes until it thickens slightly.

Combine Gnocchi and Sauce: Add the cooked gnocchi to the skillet and gently toss to coat them in the creamy tomato sauce. Allow it to cook together for an additional 2-3 minutes to let the flavors meld.

Serve: Divide the creamy gnocchi into bowls. Tear the burrata and place on top of each serving. Drizzle with a little more olive oil, sprinkle with fresh basil, and add grated Parmesan cheese to taste.

Enjoy: Serve immediately, ensuring the burrata is still slightly creamy inside for a delightful contrast in texture!
