  • 1 cup frozen corn kernels
  • 1 (15‑oz) can black beans, drained and rinsed
  • 1 large onion, diced
  • 2 cloves garlic, minced

Soup Base

  • 4 cups low‑sodium chicken broth
  • 1 (14.5‑oz) can diced tomatoes with green chilies
  • 2 tablespoons tomato paste

Seasonings

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon chipotle powder (optional for heat)
  • Salt and freshly ground black pepper, to taste

Toppings & Garnishes

  • 1 avocado, diced
  • ¼ cup fresh cilantro, chopped
  • ½ cup shredded sharp cheddar cheese
  • Juice of 1 lime
  • Tortilla chips, crushed (optional)

Instructions

Searing for Flavor

  1. Heat a skillet. Warm a large skillet over medium‑high heat, add a drizzle of olive oil, and wait until the oil shimmers. This temperature is hot enough to sear without burning.
  2. Brown the chicken. Place the breasts in the skillet, leaving space between them. Cook 3–4 minutes per side until a deep golden crust forms. The sear creates Maillard‑derived flavors that will enrich the soup later.
  3. Deglaze quickly. Add a splash (½ cup) of chicken broth to the pan, scraping up browned bits with a wooden spoon. Those fond pieces are flavor gold and will dissolve into the slow‑cooker broth.
