Ingredients
Base & Crust
- 4 small flour tortillas (6‑inch)
- 1 tablespoon vegetable oil
Seasoned Beef Mixture
- 1 pound ground beef (80 % lean)
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ¼ teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
Mexican Pizza Sauce
- ½ cup tomato sauce
- 2 tablespoons salsa verde
- 1 tablespoon mild taco sauce
- 1 teaspoon lime juice
Cheese Blend & Toppings
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ¼ cup sliced black olives (optional)
- ¼ cup chopped fresh cilantro
- ½ cup shredded lettuce
- ¼ cup sour cream (for serving)
Instructions
Preparing the Beef Filling
- Brown the meat. Add the 1 pound ground beef to the hot skillet, breaking it apart with a spatula. Cook for 5‑6 minutes, stirring occasionally, until no longer pink and beginning to caramelize. This step builds a rich, meaty foundation.
- Season. Sprinkle in 1 teaspoon chili powder, ½ teaspoon cumin, ¼ teaspoon garlic powder, plus salt and pepper. Stir well and let the spices toast for 30 seconds, releasing their aromatics. The heat activates the flavors, ensuring every bite is seasoned.
- Finish the mixture. Remove the skillet from heat. The beef is now ready to be layered onto the tortillas. If you prefer a milder profile, reduce the chili powder or add a splash of water to keep the mixture moist.
Assembling the Mexican Pizza
- Layer the sauce. In a small bowl, whisk together ½ cup tomato sauce, 2 tablespoons salsa verde, 1 tablespoon mild taco sauce, and 1 teaspoon lime juice. Spoon a thin, even layer over each crisped tortilla. The sauce adds moisture and the signature tang.
- Add the beef. Distribute the seasoned ground beef evenly across the sauced tortillas, spreading it to the edges. This creates a hearty base that mimics the original’s meat layer.
- Sprinkle cheese. Combine 1 cup shredded cheddar and ½ cup shredded mozzarella in a bowl, then shower the mixture over the beef. The blend melts beautifully, giving that classic stretch.
- Broil for perfection. Pre‑heat your oven’s broiler on high. Place the assembled tortillas on the middle rack and broil for 2‑3 minutes, watching closely until the cheese bubbles and turns a golden‑brown hue. This quick finish adds a satisfying crisp to the cheese.
