  • 8 bone‑in, skinless chicken thighs
  • 1 tablespoon olive oil

Sauce / Marinade

  • 3 tablespoons honey
  • 2 tablespoons gochujang (Korean red pepper paste)
  • 1 tablespoon soy sauce (or tamari for gluten‑free)
  • 1 teaspoon freshly grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil

Seasonings & Garnish

  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon toasted sesame seeds
  • 2 green onions, thinly sliced

Instructions

Grill & Sauce

  1. Preheat the grill. Set a gas grill or charcoal grill to medium‑high heat (about 400°F/200°C). Brush the grates lightly with olive oil to prevent sticking and to promote a nice sear.
  2. Sear the thighs. Place the marinated chicken skin‑side down (if skin is present) and grill for 4‑5 minutes per side, resisting the urge to move them. You’re looking for a deep amber crust and clear grill marks.
  3. Transfer to a skillet. While the chicken finishes on the grill, heat a large skillet over medium heat. Add any remaining glaze from the bowl and let it simmer, stirring frequently to avoid burning.
  4. Finish the glaze. Reduce the simmering sauce by half, which should take about 3‑4 minutes. It will thicken and become glossy—perfect for brushing over the chicken.
  5. Baste and rest. Once the chicken reaches an internal temperature of 165°F (74°C), remove it from the grill and brush generously with the reduced glaze. Let the thighs rest for 5 minutes; this redistributes juices and locks in moisture.
