  • 1/3 cup honey
  • 1/4 cup brown sugar, packed
  • 2 Tbsp molasses
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp smoked paprika
  • 1 tsp chipotle powder (or 1 small chipotle in adobo, minced)

Seasonings & Finishing Touches

  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 2 Tbsp unsalted butter, cut into cubes
  • Fresh chopped cilantro (optional, for garnish)

Instructions

Slow Cooking the Ribs

  1. Layer the Base. Place the sliced onion and minced garlic in the bottom of the slow cooker. This creates a fragrant steam pocket that infuses the ribs with flavor from the start.
  2. Add the Ribs. Lay the seasoned ribs on top of the onion‑garlic bed, curling them around the sides of the pot if necessary. This arrangement ensures even exposure to heat and sauce.
  3. Mix the Sauce. In a separate bowl whisk together honey, brown sugar, molasses, apple cider vinegar, and a splash of water (about ¼ cup) to thin it slightly. Pour the sauce over the ribs, making sure every piece is coated.
  4. Cook Low & Slow. Cover and set the slow cooker to LOW for 6‑8 hours, or HIGH for 3‑4 hours. The low setting yields the most tender, fall‑off‑the‑bone texture, while the sauce reduces and thickens gradually.
  5. Check for Doneness. After the allotted time, ribs should be fork‑tender and the internal temperature should read at least 190 °F. If they need more time, continue cooking in 15‑minute increments.
