Apricot Glaze

- 2 tablespoons chopped fresh cilantro
Instructions
Searing the Protein
- Heat the skillet. Place a large oven‑safe skillet over medium‑high heat and add 2 tablespoons olive oil. Allow the oil to shimmer, about 2 minutes, which signals the pan is hot enough for a golden crust.
- Sear the breasts. Lay the chicken in a single layer, careful not to crowd the pan. Cook 4–5 minutes without moving, until a deep amber crust forms. Flip and sear the opposite side another 4–5 minutes. This step locks in juices and creates fond (brown bits) that will flavor the glaze later.
- Remove and set aside. Transfer the seared chicken to a plate and tent with foil. While the chicken rests, you’ll build the glaze in the same pan, preserving all the caramelized flavor.
Creating the Apricot Glaze
- Deglaze the pan. Reduce heat to medium and add ¼ cup water (or chicken broth). Scrape the fond with a wooden spoon; this dissolves the caramelized bits into the liquid, adding depth.
- Combine glaze ingredients. Stir in ¾ cup apricot preserves, 2 tablespoons honey, 1 tablespoon soy sauce, 1 teaspoon grated ginger, and 1 teaspoon orange zest. Bring to a gentle simmer, allowing the mixture to thicken for 3–4 minutes. The glaze should coat the back of a spoon.
- Integrate the apricots. Add the ½ cup chopped dried apricot halves. Simmer an additional 2 minutes so the apricots soften and release their natural sweetness.
Baking to Finish
- Return chicken to the skillet. Nestle the seared breasts into the glaze, spooning sauce over the top. This ensures every surface is coated before it enters the oven.
- Oven bake. Transfer the skillet to a preheated 375°F (190°C) oven. Bake for 12–15 minutes, or until the internal temperature reaches 165°F (74°C). Baste once halfway through for extra gloss.
- Rest and garnish. Remove the skillet, let the chicken rest for 5 minutes. Sprinkle 1 tablespoon toasted sesame seeds and 2 tablespoons chopped fresh cilantro over the top for crunch and freshness.
