Ingredients

Dry Ingredients

  • 2 ¼ cups all‑purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • 1 ½ cups granulated sugar

Wet Ingredients

  • ¾ cup unsalted butter, melted and cooled
  • 3 large eggs, room temperature
  • ½ cup buttermilk, at room temperature
  • Zest of 2 lemons (about 2 tablespoons)
  • ¼ cup freshly squeezed lemon juice
  • 1 teaspoon pure vanilla extract

Lemon Glaze

  • 1 cup powdered sugar, sifted
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon warm water (optional, for consistency)

Instructions

Bringing It All Together

  1. Fold the mixtures. Create a well in the center of the dry ingredients and pour in the wet mixture. Gently fold with a rubber spatula until just combined—over‑mixing will develop gluten and make the loaf dense.
  2. Transfer to pan. Scrape the batter into the prepared loaf pan, smoothing the top with the back of a spoon. The batter should be thick but spreadable; if it looks too stiff, add a splash of milk.
  3. Bake. Place the pan in the middle rack and bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean with just a few moist crumbs. The top should be golden and spring back lightly when pressed.
  4. Cool before glazing. Allow the loaf to cool in the pan for 10 minutes, then turn onto a wire rack. This prevents the glaze from melting and sliding off.
  5. Glaze. While the loaf cools, whisk together powdered sugar and lemon juice (add a teaspoon of warm water if the glaze is too thick). Drizzle the glaze over the warm loaf, allowing it to soak into the top and create a glossy sheen.
