Ingredients

Main Ingredients

  • 8 large eggs
  • 1 cup fresh spinach, roughly chopped
  • ½ cup crumbled feta cheese

Dairy & Liquids

  • ¼ cup whole milk or half‑and‑half
  • 1 tablespoon olive oil

Seasonings & Aromatics

  • ½ small onion, finely diced
  • 1 clove garlic, minced
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste

Optional Toppings

  • ¼ cup halved cherry tomatoes
  • 2 tablespoons fresh dill or parsley, chopped

Instructions

Baking the Omelet

  1. Preheat the Oven. Set your oven to 375°F (190°C) and let it fully heat while you finish the batter. A consistent temperature ensures the omelet rises evenly.
  2. Grease the Baking Dish. Lightly coat a 9‑inch square baking dish with a drizzle of olive oil. This prevents sticking and adds a subtle crisp to the edges.
  3. Pour & Smooth. Transfer the egg mixture into the prepared dish, spreading it with a silicone spatula so the surface is level. You should see small pockets of feta throughout.
  4. Bake Until Set. Place the dish in the oven and bake for 20‑25 minutes, or until the top is golden‑brown and a toothpick inserted in the center comes out clean. The edges should be firm but the interior remains soft.
  5. Rest & Garnish. Remove from the oven and let the omelet rest for 5 minutes. This short rest lets the steam finish cooking the center and makes slicing easier. Sprinkle fresh dill or parsley on top for color and freshness.
