  • 1 lb boneless, skinless chicken thighs
  • 8 small corn tortillas
  • 1 cup shredded red cabbage
  • 1/2 cup diced fresh pineapple (optional)
  • 1/4 cup chopped fresh cilantro

Sauce & Marinade

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon chipotle in adobo, minced
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper

Seasonings & Garnish

  • Salt and freshly ground black pepper, to taste
  • 1 avocado, sliced
  • 1/4 cup crumbled queso fresco
  • Lime wedges, for serving

Instructions

Cooking the Chicken

  1. Heat the Skillet. Place a large cast‑iron or non‑stick skillet over medium‑high heat. When the pan is hot (a drop of water should sizzle), add a drizzle of oil.
  2. Sear the Thighs. Lay the marinated chicken in a single layer, leaving space between pieces. Cook without moving for 4‑5 minutes until a deep golden crust forms.
  3. Flip and Finish. Turn the pieces, reduce heat to medium, and cook another 4‑5 minutes. The interior should reach 165°F (74°C). Spoon half of the prepared sauce over the chicken during the last minute.
  4. Rest the Meat. Transfer the chicken to a cutting board, cover loosely with foil, and let it rest for 5 minutes. Resting locks in juices and makes slicing easier.
