  • 1 cup low‑sodium beef broth
  • 1 tbsp apple cider vinegar

  • Salt and freshly ground black pepper, to taste
  • 2 tbsp fresh cilantro, chopped (optional)
  • ¼ cup shredded sharp cheddar (optional)

Instructions

Building the Chili Base

  1. Brown the Beef. Heat a large Dutch oven or heavy pot over medium‑high heat. Add a splash of oil, then crumble the ground chuck into the pan. Cook, stirring occasionally, for 6‑8 minutes until the meat loses its pink color and develops a deep brown crust. Browning creates Maillard compounds that add savory depth.
  2. Sauté Aromatics. Reduce heat to medium and push the beef to the sides. Add the diced onion to the center and sauté for 3‑4 minutes until translucent. Stir in the minced garlic and cook another 30 seconds, just until fragrant—over‑cooking garlic can introduce bitterness.
  3. Toast the Spices. Sprinkle smoked paprika, cumin, chipotle powder, and cinnamon over the mixture. Stir continuously for 1‑2 minutes; this brief toasting releases essential oils, intensifying the chili’s aroma and flavor.
  4. Incorporate Tomato Paste & Pumpkin. Add tomato paste, stirring to coat the meat and vegetables. Cook for another minute to caramelize the paste, then fold in the pumpkin puree. The pumpkin will melt into a silky base, binding the ingredients together.
  5. Deglaze & Simmer. Pour in the beef broth, scraping the browned bits from the pot’s bottom. Bring the mixture to a gentle boil, then lower to a simmer. Add apple cider vinegar, season with salt and pepper, and let the chili cook uncovered for 20‑25 minutes, stirring occasionally. The sauce will thicken and the flavors will meld.
