  • 2 tablespoons olive oil

Garlic Butter Sauce

  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice

Seasonings & Garnish

  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

Searing the Steak

  1. Heat the skillet. Place a heavy‑bottomed cast‑iron or stainless skillet over medium‑high heat. When the pan is hot (a few drops of water should dance), add 1 tablespoon of olive oil and swirl to coat.
  2. First side. Lay the steaks away from you to avoid splatter. Cook undisturbed for 4‑5 minutes, until a deep golden‑brown crust forms. Resist the urge to move them; this is how the Maillard reaction creates flavor.
  3. Flip and finish. Turn the steaks and add 2 tablespoons of butter to the pan. As the butter melts, tilt the pan and spoon the bubbling butter over the meat for 3‑4 minutes, or until the internal temperature reaches 130°F for medium‑rare.
