  • Salt and freshly ground black pepper, to taste
  • ¼ cup fresh cilantro, chopped
  • ½ ripe avocado, sliced
  • ¼ cup sour cream (optional)

Instructions

Cooking Process

  1. Heat the Skillet. Place a large cast‑iron skillet over medium‑high heat for 2‑3 minutes. Add a drizzle of olive oil and swirl until shimmering. A hot pan ensures a quick sear that locks in juices.
  2. Sear the Chicken. Add the marinated chicken in a single layer. Cook without moving for 3‑4 minutes until the edges turn golden brown. Flip and cook another 3‑4 minutes until the interior reaches 165°F. Transfer to a plate and keep warm.
  3. Saute the Veggies. In the same skillet, add a splash more oil if needed, then toss in the sliced onions and bell peppers. Stir‑fry for 4‑5 minutes until they soften and develop a slight char, which adds smoky depth.
  4. Combine Chicken & Veggies. Return the cooked chicken to the pan, stir to mix with the vegetables, and season with additional salt and pepper if required. Let everything mingle for 1 minute so flavors meld.
  5. Assemble the Quesadillas. Lay a tortilla on a clean surface, sprinkle half of the cheese blend, add a generous spoonful of the chicken‑veggie mixture, then top with the remaining cheese. Fold the tortilla in half, pressing gently.
  6. Griddle the Quesadilla. Wipe the skillet clean, return to medium heat, and melt a thin pat of butter or drizzle oil. Place the folded tortilla, cooking 2‑3 minutes per side until the tortilla is crisp golden and the cheese is fully melted. Repeat with remaining tortillas.
