  • ¼ cup dark brown sugar
  • ¼ cup coconut milk

  • 2 tbsp vegetable oil

Instructions

Searing for Color

  1. Heat the skillet. Place a heavy‑bottomed pan over medium‑high heat and add vegetable oil. When the oil shimmers (about 2 minutes), it’s ready for the chicken.
  2. Sear the thighs. Pat the chicken dry with paper towels, then add pieces skin‑side down. Cook without moving for 4‑5 minutes until the skin turns deep golden and releases easily from the pan.
