Instructions

Cooking the Scramble

  1. Heat the Skillet. Place a large non‑stick skillet over medium heat and melt 1 tablespoon butter. When the butter foams and turns a light golden hue, it signals the pan is ready for sautéing.
  2. Sauté Vegetables & Ham. Add the diced red and green bell peppers and onion. Cook, stirring occasionally, for 3–4 minutes until they soften but retain a slight crunch. Stir in the 1 cup diced ham and let it brown for another 2 minutes, releasing its smoky aroma.
  3. Introduce the Egg Mixture. Reduce the heat to low‑medium and pour the whisked eggs over the vegetables and ham. Let the edges set for about 20 seconds before gently pushing the cooked portions toward the center with a silicone spatula, allowing uncooked egg to flow to the pan’s surface.
  4. Fold in Cheese. When the eggs are about 70% set—still slightly runny on top—sprinkle the ½ cup shredded sharp cheddar evenly. Fold the cheese into the scramble; the residual heat will melt it into silky ribbons that bind the ingredients together.
  5. Finish & Serve. Remove the skillet from heat just before the eggs are completely firm; they will finish cooking from residual heat. Taste and adjust seasoning if needed, then garnish with fresh chives for a burst of color and freshness.
