Sauce & Marinade

- 1 tablespoon honey (or maple syrup)
- 1 tablespoon rice vinegar
- 1 teaspoon toasted sesame oil
- 2 cloves garlic, minced
- 1 teaspoon freshly grated ginger
Seasoning & Garnish
- ½ teaspoon red‑pepper flakes (optional)
- 1 tablespoon toasted sesame seeds for garnish
- 2 green onions, sliced thin
Instructions
Cooking the Chicken
- Heat the Wok. Place a large skillet or wok over medium‑high heat for 2–3 minutes. Add 2 tablespoons vegetable oil and swirl to coat. The oil should shimmer but not smoke, indicating the ideal temperature for searing.
- Sear the Strips. Add the chicken in a single layer, making sure not to crowd the pan. Let it cook undisturbed for 2 minutes until a golden crust forms, then stir‑fry for another 2–3 minutes until the pieces are just cooked through. Remove the chicken and set aside; this prevents overcooking later.
- Stir‑Fry the Veggies. Reduce the heat to medium and add a splash more oil if needed. Toss in the carrots, bell pepper, broccoli, and snap peas. Stir continuously for 3–4 minutes; the vegetables should stay crisp‑tender and retain their vivid colors.
- Combine & Sauce. Return the chicken to the pan, pour the prepared sauce over everything, and stir to coat. Let the mixture simmer for 2 minutes, allowing the sauce to thicken and cling to each piece. If the sauce seems too thin, drizzle a teaspoon of cornstarch mixed with water and cook another minute.
- Finish & Garnish. Sprinkle ½ teaspoon red‑pepper flakes (if using), 1 tablespoon toasted sesame seeds, and sliced green onions. Give one final toss, then remove from heat. The dish should look glossy, fragrant, and ready to serve.
