- 2 large red bell peppers, roasted, peeled, and diced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth (low‑sodium)
- ½ cup heavy cream (or coconut cream for dairy‑free)
Spices & Aromatics
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- ¼ teaspoon ground cinnamon
- Salt and freshly ground black pepper, to taste
Garnish
- 2 tablespoons toasted pumpkin seeds (pepitas)
- Fresh chives, thinly sliced
- Drizzle of extra‑virgin olive oil (optional)
Instructions
Building the Soup Base
- Sauté aromatics. In a large stockpot over medium heat, add 2 tablespoons olive oil. Once shimmering, add the chopped onion and a pinch of salt. Cook 5‑6 minutes, stirring occasionally, until the onion becomes translucent and begins to caramelize. Add the minced garlic and cook an additional 30 seconds until fragrant—this prevents bitterness.
- Introduce pumpkin and spices. Stir in the cubed pumpkin, ground cumin, smoked paprika, and cinnamon. Cook for 2‑3 minutes, allowing the spices to toast lightly and coat the pumpkin pieces, which deepens their flavor.
- Add broth and roasted peppers. Pour in the vegetable broth, scraping the bottom of the pot to release any browned bits. Bring to a gentle boil, then reduce to a simmer. Add the diced roasted red peppers. Cover and let simmer for 15‑18 minutes, or until the pumpkin is fork‑tender.
- Blend to perfection. Remove the pot from heat. Using an immersion blender, blend the soup until smooth and velvety. If you prefer a silkier texture, transfer in batches to a countertop blender, blending on low speed. Return to the pot and stir in the heavy cream (or coconut cream). Warm through over low heat; do not boil once the cream is added.
- Season and finish. Taste and adjust salt and pepper as needed. For an extra layer of brightness, stir in a squeeze of fresh lemon juice (optional). Keep the soup warm on the lowest setting while you prep garnishes.
