Building the Base
- Sauté aromatics. Add the diced onion and red bell pepper to the bacon‑fat‑laden skillet. Cook, stirring occasionally, for 3‑4 minutes until softened and lightly caramelized. This step infuses the fat with sweet, savory notes that will permeate the entire casserole.
- Combine cheese. Sprinkle the shredded cheddar and grated Parmesan into the skillet, stirring until the cheeses melt into a cohesive, glossy mixture. The melted cheese forms the base of the sauce, ensuring every pierogi bite is coated in richness.
- Mix custard. In a separate bowl, whisk together the eggs, whole milk, sour cream, melted butter, smoked paprika, salt, and pepper until smooth. The custard will set the casserole, creating a tender, custardy interior.
- Assemble layers. Lightly grease a 9‑x‑13‑inch baking dish. Spread half of the pierogi evenly across the bottom, then pour half of the cheese‑and‑bacon mixture over them.
