  • ¼ cup chopped fresh chives
  • Optional: ½ teaspoon red‑pepper flakes for heat

Instructions

Building the Alfredo Sauce

  1. Saute aromatics. Reduce heat to medium. Add the minced shallots and garlic to the pan, stirring for 30‑45 seconds until fragrant but not browned. This prevents bitterness and releases sweet notes.
  2. Deglaze. Stir in the Dijon mustard, then splash in ¼ cup of the pasta cooking water. Scrape the browned bits from the bottom of the skillet—those are flavor gold.
  3. Incorporate dairy. Add the butter and let it melt, then pour in the heavy cream. Bring the mixture to a gentle simmer, allowing it to thicken slightly, about 3‑4 minutes. The sauce should coat the back of a spoon.
  4. Finish with cheese. Reduce heat to low and whisk in the Parmesan and cheddar until smooth. Taste and adjust seasoning with extra salt, pepper, or a pinch of red‑pepper flakes if you like heat.
  5. Combine pasta. Drain the fettuccine, reserving ½ cup of cooking water. Toss the hot noodles into the sauce, adding a splash of the reserved water if the sauce needs loosening. Mix until every strand is glossy.
