Ingredients

Fruit Base

  • 2 cups strawberries, hulled & quartered
  • 1 cup blueberries
  • 1 cup pineapple chunks
  • 2 kiwis, peeled & sliced
  • 1 orange, segmented

Dressing

  • 3 tablespoons freshly squeezed lime juice
  • 2 tablespoons honey (or agave for vegan)
  • 1 teaspoon finely grated ginger
  • Pinch of sea salt

Extras & Garnish

  • 2 tablespoons toasted coconut flakes
  • Fresh mint leaves, torn

Instructions

Tossing & Chilling

  1. Combine Fruit. Place all prepared fruit in a large mixing bowl. Toss gently with clean hands to avoid bruising the berries. The bowl should be large enough to allow the dressing to coat each piece evenly.
  2. Drizzle Dressing. Pour the honey‑lime dressing over the fruit. Using a spatula, fold the mixture carefully until every slice is lightly glazed. You’ll notice a faint sheen—this indicates the dressing is well‑distributed.
  3. Season & Garnish. Sprinkle 2 tablespoons toasted coconut flakes and a handful of fresh mint leaves over the top. The coconut adds a subtle crunch, while mint provides a cooling contrast.
  4. Chill. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This short chill allows the flavors to meld and the fruit to become refreshingly cool—ideal for a brunch or breakfast setting.
