  • 4 (6‑ounce) salmon fillets, skin on
  • 2 tablespoons extra‑virgin olive oil

Marinade & Sauce

  • 1/4 cup dry white wine (such as Pinot Grigio)
  • 1/3 cup sun‑dried tomatoes, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon capers, rinsed
  • 1 tablespoon fresh lemon juice
  • 1/4 cup fresh basil leaves, torn
  • 1 teaspoon dried oregano

Seasonings & Garnish

  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons toasted pine nuts
  • Extra‑virgin olive oil, for drizzling

Instructions

Searing the Fillets

  1. Heat the Skillet. Place a large, oven‑safe skillet over medium‑high heat and add 2 tablespoons extra‑virgin olive oil. When the oil shimmers (about 2 minutes), it’s ready for a perfect sear.
  2. Skin‑Side Down. Lay the fillets skin‑side down, pressing gently for 10 seconds to prevent curling. Cook without moving for 4–5 minutes, until the skin turns deep golden and releases easily from the pan.
  3. Flip and Finish. Turn the fillets over and sear the flesh side for an additional 2 minutes. At this point the salmon is partially cooked and ready for the sauce.

Creating the Tuscan Sauce

  1. Deglaze. Reduce heat to medium and pour in 1/4 cup dry white wine. Scrape the browned bits (fond) from the bottom of the pan with a wooden spoon; these add depth to the sauce.
  2. Add Aromatics. Stir in 2 cloves garlic, minced, 1/3 cup sun‑dried tomatoes, and 1 tablespoon capers. Cook for 30 seconds until fragrant, being careful not to burn the garlic.
  3. Season & Finish. Sprinkle in 1 teaspoon dried oregano, then add 1 tablespoon fresh lemon juice. Let the mixture simmer for 2–3 minutes, allowing it to thicken slightly and meld the flavors.
