Ingredients

Main Ingredients

  • 4 boneless, skinless chicken breasts (about 1½ lbs)
  • 1 red bell pepper, sliced into strips
  • 1 cup broccoli florets
  • 2 tablespoons vegetable oil

Sauce & Marinade

  • 3 tablespoons sweet chili sauce
  • 2 tablespoons honey
  • 1 tablespoon soy sauce (or tamari for gluten‑free)
  • 1 teaspoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced

Seasonings & Garnish

  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 teaspoons toasted sesame seeds
  • 1 tablespoon chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

Searing the Chicken

  1. Heat the skillet. Place a large skillet over medium‑high heat and add 2 tablespoons vegetable oil. When the oil shimmers (about 2 minutes), it’s hot enough to sear.
  2. Sear the cutlets. Remove chicken from the marinade, letting excess drip off. Lay the pieces in a single layer—do not crowd the pan. Cook 3‑4 minutes per side until a deep golden crust forms. This step locks in juices and creates the caramelized base for the sauce.
  3. Set aside. Transfer the seared chicken to a plate and keep warm while you prepare the vegetables.

Finishing the Sauce & Baking

  1. Make the glaze. Return the reserved marinade to the skillet, stirring constantly. Bring to a gentle boil, then reduce to a simmer. Add crushed red pepper flakes if you like extra heat. Cook 2‑3 minutes until the sauce thickens enough to coat the back of a spoon.
  2. Combine. Nestle the seared chicken back into the pan, turning to coat each piece with the glossy glaze. Add the vegetables, stirring briefly to distribute the sauce evenly.
  3. Bake. Transfer the entire skillet (or move contents to a baking dish) to a preheated oven at 375°F (190°C). Bake for 12‑15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). This final bake ensures the sauce penetrates the meat while keeping it moist.
