  • ⅔ cup whole milk, chilled

Cream Cheese Filling

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries (plus extra for garnish)

Honey‑Lemon Glaze

  • 3 tablespoons honey
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

Assembling the Bites

  1. Form the dough. Add the chilled whole milk to the flour‑butter mixture, stirring just until a soft dough forms. Over‑mixing can develop gluten, leading to a tough biscuit, so stop as soon as the dough comes together.
  2. Shape circles. On a lightly floured surface, pat the dough to about ½‑inch thickness. Use a 2‑inch round cutter to cut out circles. You should get roughly 12 circles.
  3. Pipe the filling. Place a small spoonful of the cream cheese‑blueberry mixture in the center of each dough circle. Lightly press the edges together to seal, forming a small bun. The seal prevents the filling from leaking during baking.
  4. Bake. Transfer the assembled bites onto a parchment‑lined baking sheet. Bake in a preheated 375°F (190°C) oven for 18‑20 minutes, or until the tops are lightly golden and the biscuits have risen.
  5. Glaze while hot. While the bites are still warm, whisk together honey, lemon juice, and lemon zest. Brush the glaze generously over each bite, allowing it to soak in and create a shiny coat. The residual heat helps the glaze set instantly.
