  • 1 teaspoon smoked paprika
  • 2 teaspoons fresh thyme leaves
  • 2 teaspoons fresh parsley, chopped (for garnish)

Cooking Process

  1. Heat the Skillet. Place a large skillet over medium‑high heat for about 3 minutes. Add the olive oil and watch for a gentle shimmer—this is the sweet spot where the oil is hot enough to sear but not smoking.
  2. Sear the Chicken. Lay the breasts in the pan without crowding. Let them cook undisturbed for 4‑5 minutes until a deep golden crust forms. Flip once and sear the other side for another 4‑5 minutes. A proper crust locks in juices.
  3. Add the Vegetables. Reduce heat to medium, push the chicken to one side, and add the halved potatoes. Cook, stirring occasionally, for 4 minutes until they start to soften. Then add the cherry tomatoes and cook an additional 2 minutes.
  4. Build the Glaze. In a small bowl, whisk honey, maple syrup, Dijon mustard, minced garlic, and lemon zest. Pour the mixture over the chicken and vegetables, stirring to coat everything evenly. Allow the sauce to bubble gently for 2‑3 minutes, scraping up any browned bits (fond) from the pan.
  5. Finish in the Oven. Transfer the entire skillet to a pre‑heated 375°F (190°C) oven. Bake for 12‑15 minutes, or until the internal temperature of the chicken reaches 165°F (74°C). Baste once halfway through for extra gloss.
