Ingredients

Main Ingredients

  • 4 large eggs
  • 1 cup diced cooked chicken breast (or turkey)
  • 2 tablespoons unsalted butter

Ranch Dressing Base

  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon fresh chives, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder

Hot Honey Glaze

  • 3 tablespoons honey
  • 1 tablespoon hot sauce (such as sriracha)
  • 1 teaspoon apple cider vinegar

Seasonings & Garnish

  • Salt and freshly ground black pepper, to taste
  • Extra chives for garnish

Instructions

Cooking the Protein and Eggs

  1. Heat the Skillet. Place a 10‑inch non‑stick skillet over medium heat and melt 2 tablespoons butter. When the butter foams and turns a light golden hue, you’re ready for the next step.
  2. Sauté the Chicken. Add the diced chicken to the pan, spreading it in a single layer. Cook for 3‑4 minutes, stirring occasionally, until the pieces are warmed through and lightly browned. This step builds a subtle caramelized flavor that will later complement the hot honey.
  3. Scramble the Eggs. Push the chicken to one side, lower the heat to medium‑low, and pour the 4 large eggs into the empty space. Stir gently, allowing curds to form. When the eggs are just set but still slightly runny, fold the chicken back in and remove the pan from heat.
  4. Coat with Ranch. Spoon the prepared ranch dressing over the egg‑chicken mixture, tossing gently until everything is glossy and uniformly coated. The residual heat will thin the dressing just enough to create a silky sauce.

Finishing the Dish

  1. Drizzle the Glaze. Pour the hot honey glaze over the ranch‑coated eggs, using a spatula to distribute it evenly. The glaze should pool slightly around the edges, creating a beautiful contrast of amber and white.
  2. Warm Through. Transfer the skillet to a pre‑heated oven at 350°F (175°C) for 5‑7 minutes. This step ensures the glaze sets and the flavors meld without overcooking the eggs.
  3. Garnish and Serve. Remove from the oven, let rest for 2 minutes, then sprinkle extra chives on top for color and a fresh bite. Serve immediately with toasted sourdough or a side of fresh fruit for a complete brunch.
