Ingredients

Main Ingredients

  • 1½ pounds ground beef (80/20)
  • ½ cup fine breadcrumbs
  • 1 large egg, lightly beaten
  • ¼ cup whole milk

Sauce & Aromatics

  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • ¾ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • ½ cup low‑sodium beef broth

Seasonings & Garnish

  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon dried thyme
  • Fresh parsley, chopped (for garnish)

Instructions

Searing the Steaks

  1. Heat the skillet. Place a large oven‑safe skillet over medium‑high heat and add 2 tablespoons olive oil. When the oil shimmers, it’s ready for a quick sear that locks in juices.
  2. Brown the patties. Lay the hamburger steaks in a single layer, leaving space between each. Cook without moving for 3‑4 minutes until a deep golden crust forms. Flip and brown the other side for another 3 minutes. This step creates caramelized bits that will later enrich the sauce.
  3. Remove and set aside. Transfer the seared steaks to a plate and tent with foil. Keeping them warm maintains temperature while you build the sauce.

Baking to Finish

  1. Return the steaks. Nestle the seared hamburger steaks back into the skillet, spooning some sauce over each piece. This ensures every steak is fully enveloped in the glaze.
  2. Oven bake. Transfer the skillet to a preheated 375°F (190°C) oven. Bake for 15‑20 minutes, or until the internal temperature reaches 160°F (71°C). The gentle bake finishes cooking the interior without drying out the exterior.
  3. Rest and garnish. Remove the skillet from the oven and let the steaks rest for 5 minutes. This short rest lets the juices redistribute, keeping each bite moist. Sprinkle chopped fresh parsley over the top for a bright finish.
