Instructions

Cooking the Pancakes

  1. Heat the Skillet. Place a non‑stick or cast‑iron skillet over medium‑high heat and add 2 tablespoons of vegetable oil. When the oil shimmers and a drop of batter sizzles immediately, the pan is ready for frying.
  2. Shape the Pancakes. Using a heaping tablespoon, spoon the batter into the skillet, flattening each mound with the back of the spoon to form 3‑inch circles. Avoid crowding; work in batches to maintain a steady temperature.
  3. Fry Until Golden. Cook the pancakes for 3‑4 minutes on the first side, watching for a deep amber crust. Flip carefully with a thin spatula and fry the other side another 3‑4 minutes, until both sides are uniformly golden and the interior is cooked through.
