- 2 Tbsp fresh cilantro, chopped
- 1 Tbsp olive oil (for toasting bread)

Cooking Process
- Heat the Skillet. Place a large cast‑iron skillet over medium‑high heat. Add a drizzle of oil and wait until it shimmers. This temperature sears the chicken quickly, locking in juices and creating a caramelized crust.
- Sear the Chicken. Add the seasoned chicken in a single layer. Cook undisturbed for 3‑4 minutes per side until each piece is deeply browned. Avoid crowding the pan; work in batches if necessary. Once seared, remove the chicken and set aside.
- Sauté Vegetables. Reduce heat to medium. In the same skillet, add the diced red bell pepper and peas. Stir for 2‑3 minutes until they begin to soften and pick up the browned bits from the chicken.
- Build the Sauce. Whisk together the soy sauce, honey, rice vinegar, and grated ginger. Pour the mixture into the skillet, scraping the fond (the caramelized bits) with a wooden spoon. Let the sauce simmer for 2‑3 minutes until it thickens slightly and becomes glossy.
- Combine Everything. Return the chicken to the pan, then gently fold in the toasted bread cubes. Toss everything together so the sauce coats each piece evenly. Transfer the skillet to the preheated oven and bake for 12‑15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the bread edges turn extra crisp.
