Cooking the Salsa
- Warm the Base. In a medium saucepan over medium heat, combine the diced jalapeño and red onion with a splash of olive oil. Sauté for 2‑3 minutes until the onion becomes translucent and the jalapeño releases its aroma. This step builds the savory foundation of the salsa.
- Add Strawberries. Stir in the quartered strawberries, allowing them to soften and release their juices. Cook for about 4‑5 minutes, gently crushing them with the back of a spoon. You’ll notice the mixture turning a deep pink‑red, signaling that the fruit is breaking down.
- Incorporate Sweet & Acidic Elements. Pour in the honey, lime juice, apple cider vinegar, and sea salt. Bring the mixture to a gentle simmer, then reduce the heat to low. Let it cook for another 5‑6 minutes, stirring occasionally, until the sauce thickens slightly and coats the back of a spoon.
- Season & Finish. Add the freshly ground black pepper and chopped cilantro. Give the salsa a final stir, taste, and adjust salt or lime if needed. Remove from heat and let it cool for a few minutes; the flavors will meld further as it rests.
- Serve or Store. Transfer the salsa to a serving bowl. It can be served warm, at room temperature, or chilled—each temperature offers a slightly different mouthfeel. If you’re preparing ahead, cover tightly and refrigerate; the salsa will stay vibrant for up to three days.
