  • ¼ cup raw honey (or maple syrup for vegans)
  • 1 teaspoon pure vanilla extract
  • ½ cup pitted Medjool dates, soaked 10 min

Optional Add‑Ins

  • ¼ cup dried cranberries, chopped
  • ¼ cup dark chocolate chips
  • 2 tablespoons pumpkin seeds

Instructions

Blending the Wet Mix

  1. Combine nut butter and honey. In a food‑processor, add ⅓ cup almond butter and ¼ cup honey. Pulse for 15 seconds until the mixture is smooth and glossy. The warmth from the honey helps the butter emulsify, creating a uniform base.
  2. Incorporate vanilla and dates. Add 1 teaspoon vanilla extract and the mashed dates. Process again until the dates are fully integrated, forming a thick, caramel‑like slurry that will hold the dry ingredients together.
  3. Mix dry and wet. Transfer the dry base into the processor and pulse in short bursts, scraping down the sides as needed. Continue until the mixture clumps together when pressed between your fingers—this usually takes 30‑45 seconds.
  4. Stir in optional add‑ins. Remove the mixture from the processor and fold in cranberries, chocolate chips, and pumpkin seeds by hand. This prevents the chocolate from melting and keeps the texture varied.
  5. Press and chill. Line an 8×8‑inch pan with parchment paper. Transfer the mixture into the pan, spreading it evenly. Using a dampened spatula, press firmly to compact the bites. Refrigerate for at least 45 minutes, or until firm enough to cut.
