  • ¾ cup unsalted butter, melted
  • ¾ cup dark brown sugar, packed
  • 1 large egg
  • 1 teaspoon pure vanilla extract

Mix‑Ins & Seasonings

  • 2 teaspoons ground cinnamon
  • ½ cup chopped toasted pecans (optional)

Instructions

Combining Wet and Dry

  1. Mix wet ingredients. In a separate medium bowl, whisk the melted butter, brown sugar, egg, and vanilla until the mixture is smooth and glossy. The butter should be warm, not hot, to avoid cooking the egg.
  2. Incorporate dry into wet. Gradually add the flour‑oat mixture to the butter blend, stirring with a wooden spoon until just combined. Over‑mixing can develop gluten, which would make the cookies tough instead of chewy.
  3. Fold in cinnamon and pecans. Sprinkle the ground cinnamon over the dough and fold it in, followed by the optional toasted pecans. This step spreads the spice evenly and prevents clumping.

Baking the Cookies

  1. Bake. Place the trays in the middle rack and bake for 10‑12 minutes, or until the tops are lightly golden and the edges are set but the centers still look soft. A visual cue is a faint crack on the surface.
  2. Cool briefly. Remove the cookies and let them rest on the sheet for 2 minutes. This allows the residual heat to finish cooking the center without drying out.
