Ingredients

8 chicken drumsticks

1/2 cup unsalted butter, softened

3 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

1 tablespoon fresh parsley, finely chopped

1 tablespoon lemon juice

Zest of 1 lemon

Salt and pepper, to taste

1 teaspoon paprika

1 teaspoon onion powder

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil for easy cleanup and place a wire rack on top if you have one.

Make the Herb Butter: In a mixing bowl, combine the softened butter, minced garlic, rosemary, thyme, parsley, lemon juice, lemon zest, salt, pepper, paprika, and onion powder. Mix well until all ingredients are thoroughly combined.

Prepare the Chicken: Pat the chicken drumsticks dry with paper towels. This helps to achieve a crispy skin. Place the drumsticks in a large bowl.

Coat the Drumsticks: Take the herb butter mixture and generously coat each drumstick, making sure to get the butter under the skin as much as possible for maximum flavor. This can be done with your hands or a brush for even coverage.

Arrange on Baking Sheet: Place the coated drumsticks onto the prepared baking sheet (or the wire rack) in a single layer, ensuring they are not crowded.

Roast in the Oven: Roast in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy. If desired, turn the drumsticks halfway through cooking for even browning.

Broil for Extra Crispiness (Optional): For an extra crispy skin, you can switch to the broil setting for the last 2-3 minutes. Keep a close eye to prevent burning.

Serve: Once cooked, remove from the oven and let rest for 5 minutes. Serve warm with your favorite sides, and enjoy the flavorful herb-infused butter drizzling down the drumsticks!
