For the Burger:

1 lb ground beef (preferably 80/20 for juiciness)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper to taste

4 slices of Irish cheddar cheese

4 brioche burger buns

For the Toppings:

4 slices of crispy bacon

1 cup colcannon (mashed potatoes with cabbage)

½ cup caramelized onions

½ cup Guinness BBQ sauce

Fresh arugula or lettuce

Pickled jalapeños (optional for a kick)

For the Colcannon:

2 cups mashed potatoes (prepared)

1 cup chopped kale or cabbage, sautéed

1 tbsp butter

Salt and pepper to taste

Prepare the Colcannon:

    - In a skillet, melt butter over medium heat. Add chopped kale or cabbage and sauté until wilted (about 5 minutes).

      - Mix the sautéed greens into the prepared mashed potatoes, seasoning with salt and pepper. Set aside to keep warm.

        Make the Burger Patties:

          - In a mixing bowl, combine ground beef with garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until just combined, being careful not to overwork the meat.

            - Shape the mixture into 4 equal patties, making a slight indentation in the center of each to prevent them from puffing up during cooking.

              Cook the Bacon:

                - In a skillet or on a griddle, cook the bacon over medium heat until crispy. Remove and drain on paper towels.

                  Grill the Burgers:

                    - Preheat a grill or cast-iron skillet over medium-high heat. Cook the burger patties for about 4-5 minutes on one side.
