  • 1 teaspoon freshly grated ginger

Seasonings & Garnish

  • ½ teaspoon ground turmeric
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon red‑pepper flakes (optional)
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon toasted coconut flakes

Instructions

Cooking the Base

  1. Heat the Skillet. Place a large skillet over medium‑high heat and add the coconut oil. When the oil shimmers (about 2 minutes), you’re ready to sear. The hot oil creates a quick crust that locks in shrimp juices.
  2. Sear the Shrimp. Add the shrimp in a single layer, ensuring they’re not crowded. Cook for 1½ minutes per side until they turn pink and opaque. Remove the shrimp to a plate and set aside; they’ll finish cooking in the sauce.
  3. Sauté Vegetables. In the same skillet, add the diced onion, sliced bell pepper, and snap peas. Stir‑fry for 3 minutes until they begin to soften but still retain a bite. The residual fond from the shrimp adds extra depth.
  4. Build the Curry Sauce. Lower the heat to medium. Stir in the red‑curry paste, grated ginger, and brown sugar, cooking for 30 seconds to release aromatics. Pour in the coconut milk, fish sauce, and lime juice, scraping the pan bottom to dissolve browned bits. Bring to a gentle simmer.
  5. Combine & Finish. Return the shrimp to the skillet, nestling them among the vegetables. Sprinkle the red‑pepper flakes if you like heat. Simmer everything together for another 3‑4 minutes, allowing the shrimp to absorb the sauce and the sauce to thicken slightly.
