Cooking Process

  1. Heat the skillet. Place a large cast‑iron or heavy‑bottom skillet over medium‑high heat for about 3 minutes. Add the butter; when it foams and turns a light amber, the pan is ready for searing.
  2. Sear the chicken. Lay the breasts in the hot butter, giving each side 4–5 minutes undisturbed. You’ll see a deep golden crust form—this Maillard reaction locks in juices and adds the signature Roadhouse flavor.
  3. Introduce aromatics. Reduce heat to medium, push the chicken to the edges, and add the minced garlic. Stir for 30 seconds until fragrant, being careful not to let it brown, which would introduce bitterness.
  4. Build the sauce. Pour in the milk, drizzle the honey, and sprinkle cayenne if you like a hint of heat. Whisk gently, scraping browned bits from the pan; these “fond” pieces are flavor gold. Let the mixture simmer for 3 minutes, allowing it to thicken slightly.
  5. Combine and bake. Add the spinach, letting it wilt into the sauce. Nestle the seared chicken back into the skillet, spooning sauce over each piece. Transfer the whole pan to a preheated 375°F oven and bake for 12–15 minutes, or until the internal temperature reaches 165°F.
