Mediterranean Sauce

  • 3 Tbsp extra‑virgin olive oil
  • 2 Tbsp fresh lemon juice (about 1 lemon)
  • 1 Tbsp red wine vinegar
  • 2 cloves garlic, minced
  • ½ cup crumbled feta cheese

Seasonings & Garnish

  • 1 tsp dried oregano
  • ½ tsp smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Optional: pinch of red‑pepper flakes for heat

Cooking Process

  1. Heat the Skillet. Place a large non‑stick skillet over medium‑high heat for 2–3 minutes. Add a drizzle of olive oil; when it shimmers, the pan is ready for searing, which locks in moisture.
  2. Sear the Chicken. Lay the breasts in the hot pan without crowding. Cook 4–5 minutes on the first side until a golden crust forms, then flip and sear the other side another 4–5 minutes. The interior should reach about 150 °F before finishing.
  3. Deglaze & Build the Sauce. Reduce heat to medium. Add the remaining red wine vinegar and a splash of water, scraping the browned bits (fond) from the pan. Stir in the crumbled feta; it will melt slightly, creating a creamy, tangy coating.
  4. Finish in the Oven. Transfer the skillet to a preheated 375 °F oven. Bake for 8–10 minutes, or until the chicken’s internal temperature hits 165 °F. This gentle finish ensures the meat stays juicy while the sauce thickens.
  5. Slice & Assemble. Remove the chicken, let it rest 5 minutes, then slice into thin strips. Warm the tortillas briefly on a dry skillet, then layer arugula, cucumber, tomatoes, chicken strips, and a generous drizzle of the pan sauce. Sprinkle extra feta and optional red‑pepper flakes before rolling.
