Cooking the Base

- Deglaze & Build Sauce. Pour in ½ cup dry white wine (or broth), scraping the browned bits from the pan with a wooden spoon. Once the liquid reduces by half (about 2 minutes), stir in 1 cup diced tomatoes, ½ cup sun‑dried tomatoes, and ¼ cup sliced Kalamata olives. Simmer for 4 minutes, allowing the flavors to meld.
