Instructions

Searing the Fillets

  1. Heat the skillet. Place a non‑stick or cast‑iron skillet over medium‑high heat for 2–3 minutes. Add a drizzle of olive oil and swirl to coat. The pan should be hot enough that a drop of water sizzles immediately.
  2. Sear skin‑side down. Lay the fillets skin‑side down, pressing gently for 10 seconds to prevent curling. Cook 4–5 minutes without moving them; the skin will become crisp and release easily when ready.
