Instructions

Cooking the Salmon

  1. Heat the Skillet. Place a large, oven‑safe skillet over medium‑high heat for 2‑3 minutes until very hot. Add a drizzle of olive oil and swirl to coat. The oil should shimmer but not smoke, indicating the perfect searing temperature.
  2. Sear Skin‑Side Down. Lay the salmon fillets skin‑side down in the pan, pressing gently for 10 seconds to ensure full contact. Cook undisturbed for 5‑6 minutes; the skin will turn crisp and release easily when ready. Resist the urge to move the fish.
  3. Flip and Glaze. Carefully flip each fillet using a thin spatula. Spoon half of the prepared glaze over the flesh side, allowing it to bubble and caramelize for 2 minutes. This step creates a glossy, slightly sticky coating that locks in moisture.
  4. Finish in the Oven. Transfer the skillet to a preheated 375°F (190°C) oven. Roast for 8‑10 minutes, or until the internal temperature reaches 125°F (52°C) for medium‑rare. The glaze will thicken further, creating a beautiful lacquered finish.
  5. Rest and Garnish. Remove the pan from the oven and let the salmon rest for 5 minutes. This resting period lets juices redistribute, keeping the flesh moist. Sprinkle chopped parsley and toasted almond slivers over the top, then drizzle any remaining glaze from the pan.
