- 1 lb Polish kielbasa, sliced into ½‑inch rounds
- 1 large apple, peeled and diced (preferably Granny Smith)
- 1 red bell pepper, sliced into strips
- 1 yellow bell pepper, sliced into strips
- 1 medium red onion, thinly sliced
Sauce & Glaze
- 2 Tbsp Dijon mustard
- 2 Tbsp pure maple syrup
- 1 Tbsp apple cider vinegar
- ¼ cup chicken broth (low‑sodium)
Seasonings & Garnish
- 1 tsp smoked paprika
- ½ tsp freshly ground black pepper
- ½ tsp sea salt (adjust to taste)
- 2 Tbsp olive oil
- 2 Tbsp fresh parsley, chopped (for garnish)
Instructions
Searing the Kielbasa
- Heat the Skillet. Place a large, heavy‑bottomed skillet over medium‑high heat for about 2 minutes. Add 2 Tbsp olive oil and swirl until the oil shimmers. A hot pan creates a crisp, golden crust that locks in flavor.
- Sear the Sausage. Add the sliced kielbasa in a single layer, being careful not to overcrowd. Cook for 3–4 minutes without moving, allowing a deep caramelized edge to develop. Flip and sear the other side for another 3 minutes. Remove the sausage to a plate and set aside.
- Deglaze the Pan. Reduce heat to medium. Pour in ¼ cup chicken broth and use a wooden spoon to scrape up the browned bits (fond). These bits are flavor powerhouses that will enrich the glaze.
Building the Veggies & Glaze
- Sauté the Vegetables. Add the sliced onions and bell peppers to the deglazed pan. Cook, stirring occasionally, for 4–5 minutes until they soften and begin to caramelize. This step adds sweetness and texture.
- Introduce the Apple. Stir in the diced apple and continue cooking for another 2 minutes. The apple will start to soften, releasing a gentle tartness that balances the sausage’s smokiness.
- Mix the Glaze. In a small bowl, whisk together 2 Tbsp Dijon mustard, 2 Tbsp maple syrup, 1 Tbsp apple cider vinegar, 1 tsp smoked paprika, ½ tsp black pepper, and ½ tsp sea salt. Pour the mixture over the vegetables, stirring to coat everything evenly.
- Combine & Finish. Return the seared kielbasa to the skillet, nestling it among the vegetables and glaze. Transfer the entire pan to a preheated oven at 375°F (190°C) and bake for 12–15 minutes, or until the apple pieces are tender and the internal temperature of the sausage reaches 160°F (71°C). Baste once halfway through for extra gloss.
