Crust

  • 1 ½ cups graham‑cracker crumbs
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar

Filling

  • 32 oz (4 ½ cups) full‑fat cream cheese, softened
  • 1 cup powdered sugar
  • 4 large eggs, room temperature
  • ½ cup sour cream
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon zest
  • ¼ teaspoon sea salt

Topping & Decoration

  • ½ cup white chocolate chips, melted
  • ¼ cup pastel‑colored chocolate Easter eggs, halved
  • Fresh mint leaves for garnish (optional)

Instructions

Baking the Cheesecake

  1. Wrap the pan. Wrap the outside of the springform pan with a double layer of heavy-duty aluminum foil to prevent water from seeping in during the water bath.
  2. Water bath. Place the pan in a larger roasting pan and pour hot water until it reaches halfway up the sides of the springform. The gentle steam creates an even, slow bake that keeps the cheesecake creamy.
  3. Transfer to oven. Pour the filling over the pre‑baked crust, smoothing the top with a spatula. Bake for 45‑55 minutes, or until the edges are set and the center still has a slight wobble—this indicates a perfectly custardy interior.
  4. Cool gradually. Turn off the oven, crack the door open, and let the cheesecake sit for 1 hour. This gradual cooling reduces the risk of cracks.
  5. Chill. Refrigerate the cheesecake, still in the springform pan, for at least 4 hours or overnight. Chilling firms the texture and allows the flavors to meld.
