  • 4 oz cream cheese, softened
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 Tbsp heavy cream

Strawberry Glaze

  • 2 cups fresh strawberries, hulled
  • 2 Tbsp maple syrup
  • 1 tsp lemon juice
  • 1 tsp cornstarch mixed with 1 Tbsp water (slurry)

Instructions

Forming the Base

  1. Press the crust. Line an 8‑inch square pan with parchment paper. Evenly spread the crust mixture, pressing firmly with the back of a spoon or a flat glass. A compact base prevents the filling from sliding and creates a satisfying crunch.
  2. Chill. Refrigerate the pan for 15 minutes. Cooling solidifies the butter, locking the crust together and making it easier to spread the creamy layer without breaking.

Assembling the Bars

  1. Spread the filling. Remove the crust from the fridge and evenly spoon the mascarpone mixture over the top, smoothing with an offset spatula. Aim for a uniform thickness of about ½ inch.
  2. Prepare the glaze. In a saucepan, combine hulled strawberries, maple syrup, and lemon juice. Cook over medium heat, stirring occasionally, until the strawberries break down (≈5 minutes). Whisk in the cornstarch slurry, continue cooking until the glaze thickens and becomes glossy (≈2 minutes). Remove from heat and let cool slightly.
  3. Apply the glaze. Pour the warm strawberry glaze over the creamy layer, using a spatula to create gentle swirls. The glaze should coat the surface without seeping into the crust.
  4. Set the bars. Return the pan to the refrigerator and chill for at least 2 hours, or until the glaze is firm. This firming step ensures clean, straight cuts.
