  • 1 tsp pure vanilla extract

Raspberry Swirl

  • 1 cup fresh raspberries
  • 2 Tbsp granulated sugar
  • 1 tsp fresh lemon juice

Garnish

  • Fresh raspberries (for topping)
  • Chocolate shavings or curls

Instructions

Making the Chocolate Cheesecake Batter

  1. Blend the Cream Cheese. Using a stand mixer on medium speed, beat cream cheese until smooth, about 2 minutes. This step eliminates lumps that could cause a grainy texture later.
  2. Incorporate Sugar and Vanilla. Add sugar and vanilla extract; continue beating until light and fluffy, roughly 1 minute. The air incorporated here contributes to the cheesecake’s light mouthfeel.
  3. Add Eggs One at a Time. Crack in eggs, mixing on low speed after each addition. Over‑mixing can cause cracks during baking, so stop as soon as the eggs are fully incorporated.
  4. Swirl in Melted Chocolate. Gently fold melted dark chocolate into the batter with a rubber spatula until just combined. The chocolate should be warm, not hot, to avoid curdling the cream cheese.

Assembling and Baking

  1. Layer the Batter. Pour the chocolate cheesecake batter over the chilled crust, smoothing the top with a spatula.
  2. Add Raspberry Swirl. Drop spoonfuls of the cooled raspberry puree onto the batter. Using a thin knife or skewer, gently swirl the puree through the batter to create a marbled effect. Avoid over‑mixing; you want distinct ribbons of pink.
  3. Bake in a Water Bath. Wrap the springform pan’s base in foil to prevent water leakage. Place the pan in a larger roasting pan and fill with hot water until it reaches halfway up the sides. Bake at 325°F (163°C) for 45‑50 minutes, or until the edges are set and the center still has a slight wobble.
  4. Cool Gradually. Turn off the oven, crack the door, and let the cheesecake sit for 1 hour. This gradual cooling reduces cracking. Afterward, remove from the water bath and chill in the refrigerator for at least 4 hours, preferably overnight.
