Ingredients

Crust

  • 1 ½ cups graham cracker crumbs
  • ¼ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • ½ teaspoon vanilla extract

Filling

  • 8 oz bittersweet dark chocolate, chopped
  • 1 cup fresh raspberries, plus extra for garnish
  • 1 cup heavy cream
  • 3 large eggs
  • ¼ cup granulated sugar
  • 1 teaspoon orange zest

Finishing Touch

  • Powdered sugar, for dusting
  • Fresh mint leaves (optional)

Instructions

Incorporating Chocolate and Raspberries

  1. Melting the Chocolate. Remove the custard from heat and stir in the chopped dark chocolate until completely melted and the mixture is glossy. This step creates a smooth, velvety texture.
  2. Adding Raspberries. Gently fold in fresh raspberries. Their juices will naturally swirl through the custard, creating beautiful ribbons while preserving bite‑size pieces for bursts of flavor.
  3. Filling the Crust. Pour the chocolate‑raspberry custard into the pre‑baked crust, smoothing the top with a spatula. Tap the pan lightly on the counter to release any trapped air bubbles.
  4. Baking the Pie. Place the filled pie back into the oven and bake at 350°F for 25‑30 minutes, or until the edges are set but the center still has a slight wobble—this ensures a custard‑like interior.
  5. Cooling. Remove the pie and let it cool on a wire rack for 15 minutes, then refrigerate for at least 2 hours. Chilling allows the filling to fully set and intensifies the chocolate‑raspberry flavor.
