- 2 tbsp Dijon mustard

- ½ tsp garlic powder

- 2 tbsp chopped fresh parsley (optional)
Instructions
Breading & Baking
- Mix the dry coating. In a separate bowl combine panko, grated Parmesan, smoked paprika, garlic powder, salt, and pepper. Stir until the spices are evenly distributed, creating a seasoned breadcrumb blend that will turn golden in the oven.
- Coat the chicken. Transfer the yogurt‑egg‑tossed chicken to the breadcrumb bowl. Using tongs, roll each piece until fully covered. Press gently to ensure the coating adheres; a tight crust prevents the bites from falling apart while baking.
- Arrange on a sheet pan. Line a rimmed baking sheet with parchment paper. Space the coated chicken bites in a single layer, leaving a small gap between each piece so hot air can circulate and crisp every side.
- First bake. Preheat the oven to 425°F (220°C). Place the pan in the center rack and bake for 12‑15 minutes, turning halfway through. The high heat creates an initial crunch and begins the Maillard reaction that adds flavor.
- Prepare the glaze. While the chicken bakes, whisk together honey, Dijon mustard, and apple cider vinegar in a small saucepan. Heat over low‑medium until the mixture is smooth and slightly thickened, about 3 minutes. This glaze will caramelize on the bites during the final bake.
- Finish baking with glaze. Remove the pan, drizzle the honey‑mustard glaze evenly over the partially cooked bites, and give them a quick toss to coat. Return to the oven for an additional 5‑7 minutes, or until the internal temperature reaches 165°F (74°C) and the coating is deep golden‑brown.
