Feta & Crunch Coating
- 2 tablespoons unsalted butter, melted
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
Spicy Sweet Glaze
- ¼ cup honey
- 2 tablespoons sriracha sauce
- 1 tablespoon lime juice
Seasonings & Garnish
- Salt and freshly ground black pepper, to taste
- 2 tablespoons fresh cilantro, finely chopped
- Sesame seeds, for sprinkling (optional)
Instructions
Cooking the Rolls
- Preheat the Oven. Set your oven to 375°F (190°C) and line a baking sheet with parchment paper. This temperature allows the pastry to puff while the breadcrumb coating turns golden.
- Sear the Rolls. Heat 2 tablespoons of neutral oil (such as canola) in a large skillet over medium‑high heat. When the oil shimmers, add the rolls in a single layer, turning them every 2 minutes until all sides are lightly browned, about 4‑5 minutes total. This step creates the initial crunch and locks in moisture.
- Transfer to Oven. Arrange the seared rolls on the prepared baking sheet, spacing them 1 inch apart. Bake for 12‑15 minutes, or until the pastry is puffed and the breadcrumbs are deep golden brown. The interior feta should be soft and slightly melty.
- Make the Glaze. While the rolls bake, combine honey, sriracha, and lime juice in a small saucepan. Bring to a gentle simmer over low heat, stirring constantly. Cook for 3‑4 minutes until the mixture thickens enough to coat the back of a spoon.
- Glaze & Garnish. Remove the rolls from the oven and immediately brush each with the warm glaze, allowing it to seep into the cracks. Sprinkle chopped cilantro and sesame seeds over the top for color and a subtle nutty finish. Serve while still warm.
